This is a test blog for the recipe section. I am not a fan of
zuppa but like this one!
Ingredients :===========scallions or spring onions - 1 bunch, chopped diagonally.
roasted corn kernels - 2 cups
butter - 2 tbsp
onion powder - 1 tbsp
homemade veg stock (OR cornstarch - 1 tbsp dissolved in water)
Black pepper, salt - to taste
Ginger zest - 1 tsp
Preparation :===========1) Heat the butter in the soup pan. Add 3/4 of the crushed black pepper to it.
2) Add the corn kernels and white sections of the scallions and half portion of the salt. Saute until half tender.
3) Add the green parts of the scallions and stir-fry for a minute.
4) Pour in five cups of water, add the onion powder and remaining salt and bring to a boil on medium flame.
5) Put in the ginger zest and cornstarch (dissolved in water). Lower the flame and boil for a minute or two, while stirring.
6) Remove two cups of the soup into a mixer and make a thick puree. Add back to the rest of the soup and simmer. Add remainder of the crushed black pepper.
7) Remove from flame and top with a dash of lime and chopped cilantro.
Note : Using oil instead of butter changes the flavour drastically! Not recommended.

Variation can be to add only 3/4 parts of the veg stock and 1/4 parts milk to make it into a chowder.
